Aresti Cabernet Sauvignon Estate Selection 2007
Originally of French origins, this versatile grape produces exceptional wines around the globe. It's usually medium to full bodied with a fine structure that supports black and red fruit flavors with typical notes of olive, chili and herbs that add complexity.
Winemaker's Notes
The hand harvested grapes passed through the selection table, and then de-stemmed and pressed before they passed to fermentation tanks where fermentation process took place at 25°C aprox. to maintain the varietal tipicity, the fruit and nice tannins. Then the wine went to controlled malolactic fermentation. A percentage of the wine was kept in contact with wood during this period to increase its complexity.
