Winemaking
Harvest date was determined when the optimum ripeness level of the grapes was reached. After receiving the grapes in the winery, these were de-stemmed and crushed and sent to fermentation vessels. Fermentation started naturally under controlled temperature, and during the first few days efforts are done in cap management to maximise the extraction of colour and aromas, and in order to obtain the soft tannins that will give our wines a pleasant structure.

"The 2008 Tempranillo (60%) + Cabernet Sauvignon (40%) is dark purple-colored with a perfume of violets, black currant, and blackberry. It has a bit more backbone than its two predecessors and might actually evolve for 1-2 years although there is no reason to wait."
Ageing
The wine ages in American and French oak casks as well as in Acacia casks during 4 months.
Tasting Notes
Dense and bright red. Suggesting aromas of plums and violets with touches of liquorice. Full , broad and pleasing palate of ripe fruit and undertones of spice and cedar wood. Long and persistent finish.
Food Pairing
Ideally suited with grilled or char grilled meat as well as simple recipes of pasta or rice.
