| Tasting notes |
| The color is deep purple. The nose is intense and elegant, with aromas of ripe red fruit including raspberry
and strawberry with slightly toasted notes. Good balanced wine with soft tannins and a long smooth finish.
Intense red fruit and licorice on the palate. |
| Wine maker notes |
| After de-stalking and crushing, the focus during the three week maceration period is on color and extraction.
Two "delestages” per day are necessary (emptying the fermenting juice from the vat and pumping it
back on to the solids). After racking and malolactic fermentation, the wines are blended and aged in vats
on the lees with controlled oxidation. |
| Food pairing |
| Pair with a hearty beef stew, Bleu cheese and veal scallopine. |
